My Thought on Ratatouille Recipe :

I feel like this has been the longest winter in my life. It seems like it has lasted for 5 long years. Time passes very slowly when you don’t move from your couch. So, it was no wonder that I desperately grabbed onto the first rays of March sunshine, decided that winter is over, and started craving summer foods. A recipe is full of fresh veggies packed with flavors that taste like summer. The Pixar Ratatouille recipe is one of them and I can tell one of my favorite too.


I know that Ratatouille is a French recipe, however, most Mediterranean countries share some basic dishes with minor differences. Thus, in spring and summer, you are likely to find some version of Ratatouille on most Greek dinner tables. I say spring and summer because that’s when zucchinis, eggplants, and tomatoes are normally in season and that’s when Ratatouille will taste the best. Of course, there is no end to the combinations of veggies you can use. The great thing about this dish is that you can serve it as a main with a side of salad and feta cheese or as a side dish for any bbq meat or fish. So, today I will show you my version of the most popular Pixar Ratatouille but many more alternatives are coming as summer is getting closer.

What is the secret of making the best Ratatouille?

Getting fresh good quality vegetables is the only thing you need to get the best result. That is why it is one of those recipes that tastes different during summer. Because all those veggies are in season and their taste is amazing. So imagine how much better it will get when you combine them properly and add just a bit of spice and herbs. Just by thinking of it, I can’t wait to have a portion of the whole pan.

Also, making your own tomato sauce from fresh tomatoes will boost the taste so much. I have tried to make it with canned tomatoes but the result didn’t compare to the one with homemade tomato sauce. What can I say? I have demanding tastebuds. Don’t get me wrong, I obviously use canned tomatoes during winter as it is impossible to find good fresh ripe tomatoes and the result is good too, just not what dreams are made of. So if you can get fresh ripe in-season tomatoes to go for it.

Finally, good-quality aubergines, zucchinis, and peppers will give you an amazing result. Give that a go and you will soon realize that meat-free recipes can be amazing too.

What ingredients do we need for the ratatouille recipe?

The good thing about this recipe is that it needs only a few ingredients which makes it easy, fast, and very cheap to make. For four portions we will need:

How to make homemade sauce?

The process we will follow here is so simple. If you get fresh tomatoes remove the skin (you can see how to do this easily here) and blend them. Otherwise, get the whole tomatoes from the can and blend them too. Now add a pan to high heat and add the olive oil. Brown the chopped onion and the chopped bell pepper for a couple of minutes and then add the chopped garlic for another minute. Finally, add the blended tomatoes with a cup of hot water, salt, pepper, paprika, chopped basil, and a pinch of sugar, and let it simmer until it gets nice and thick. As I told you before, in every recipe with tomatoes we have to add a pinch of sugar. The tomatoes are very acidic and we don’t want the final result to taste sour; adding some sweetness we get rid of it. Also, sugar helps to boost the flavour and make everything taste better. If you don’t want to add sugar you can replace it with anything sweet. That can be some honey or sweetener. The results will be great too. But please, don’t skip this step as the results will not be the same. In case you have some ready homemade sauce like I do you can use this one.

How to assemble the ratatouille recipe?

Now the step left is to assemble and bake the the veggies and your Ratatouille recipe will be ready to be resented to the admiring crowds.

You can do it 2 ways. The first and the easiest is to cut your veggies in cubes and add them to the sauce and bake them. The second is the Pixar way and it is the way we will do it today. I chose this way as it looks great and it is something that you can do to impress friends or family. So for that, we have to slice thin the eggplant, zucchinis, and tomatoes. The goal is to create layers of eggplant, zucchini, tomato and add them vertically as you can see in the images below.

That is the most difficult step in the recipe as it takes a bit of time but I belive the results is so good that it’s worth every single minute you spend. Finally, cover with aluminium foil and bake for 30 minutes at 180C (360F) and then uncover and bake for 30 minutes or until the veggies are ready and golden. Let it cool for a while and serve with some cheese and salad. Enjoy!!!

  • Slice the eggplant, zucchinis, and tomatoes. Get one slice of eggplant, one slice of zucchini, one of tomato and put them in the sauce, and keep repeating the steps until there is no more space left in the pan
  • Finally, cover the pan with aluminium foil and bake in a preheated oven at 180C (360F) for 30 mins and then uncover and bake for 30 minutes or until the veggies are nice and golden.
